Cinder & Sable started with a simple wish: a dark, quiet lounge where the drinks were made with care and nobody hurried you out the door.

Our story
Two friends, one worn-in idea.
We're Rowan and Lena — a tea blender and a designer who spent years talking about the lounge we wished existed. In 2021 we found a narrow brick space off East 6th, painted it the color of a moonless night, and started pouring.
The name says most of it. Cinder for the smoke and char we love in a glass; Sable for the dark, soft room we built around it. Everything here is made from scratch and served without theater — just good drinks, in good light, at your own pace.

Four things we won't cut corners on.
Atmosphere
Low light, warm brass, and a soundtrack on vinyl. The room is half the drink.
Hospitality
No velvet rope, no rush. Just people who are glad you came and want you to stay.
Seasonality
The list shifts with what's good. Texas citrus in winter, stone fruit come summer.
